Creamy Burrata Gnocchi in Tomato Sauce

Soft, pillowy potato gnocchi tossed in a rich, garlicky tomato sauce and finished with creamy burrata and fresh basil. A simple yet indulgent Italian-inspired dish, perfect for an easy weeknight dinner or a cozy meal at home.

Ingredients

- 1 pack Armando Potato Gnocchi

- 2 tbsp Euromercato Organic Extra Virgin Olive Oil

- 2 cloves garlic, minced

- 1 can (28 oz) Rodolfi Organic crushed tomatoes

- ½ tsp salt

- ½ tsp black pepper

- ½ tsp dried oregano

- ½ tsp red pepper flakes (optional)

- ½ cup fresh basil leaves, torn

- 1 ball Nonno Nanni Burrata cheese

- Grated Parmesan cheese (optional, for serving)

Preparation

1. Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2–3 minutes. Drain and set aside.

2. Prepare the Tomato Sauce
Heat olive oil in a large pan over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant. Pour in the crushed tomatoes, then season with salt, black pepper, oregano, and red pepper flakes (if using). Simmer gently for 10 minutes, stirring occasionally.

3. Combine
Add the cooked gnocchi to the tomato sauce and toss gently until well coated. Stir in the fresh basil.

4. Finish & Serve
Tear the burrata into pieces and place it over the warm gnocchi, allowing it to soften and melt slightly. Finish with grated Parmesan if desired. Serve immediately and enjoy.

Pair with a fresh green salad and crusty bread for a complete Italian-style meal.
