FETTUCCINE WITH LEMON SAUCE

Ingredients for 4 people

12oz fettuccine  

2 cloves garlic

2 organic lemons

Fresh parsley

6 tbsp extra-virgin olive oil 

Pinch of salt

 

INSTRUCTIONS 

Wash the lemons thoroughly, grate only the yellow part of the rind and set to one side. Squeeze the juice into a large bowl, and mix in the oil, salt, finely chopped fresh parsley and the cloves of garlic (whole). Boil the pasta in a large pot of salted water, take out two spoonfuls of the water, then drain. Add the pasta and hot water to the condiment. Add the grated lemon zest, stir everything together, cover and leave for a few minutes. Remove the garlic cloves before serving.
