Maccheroncini di Campofilone are a unique, artisan pasta known for their exceptionally thin sheet and fine, delicate cut. These characteristics give the pasta its signature lightness and allow for an ultra-fast cooking time of just 1 minute, whether placed in boiling water or added directly into warm sauce.

Prepared following the centuries-old traditional recipe, the dough is made using only durum wheat flour and 33.4% whole fresh eggs, with no added water. The pastry is rolled into thin layers, expertly cut into fine strands, and dried on the historic paper sheets typical of Campofilone production.

Recognized with I.G.P. status in 2013, Maccheroncini di Campofilone represents a protected culinary heritage. The official designation also acknowledges Nello Spinosi as the owner of the first pasta laboratory dedicated to producing this specialty in Campofilone.
