Truffle oil has a strong flavor and potency, so a small amount goes a long way. Because of its strong flavor, it pairs well with gentler meals, which is why risotto is ideal!
Truffle risotto is a rich and simple dish, and it’s perfect for a romantic dinner at home with a glass of your favorite white wine. It’s also simple to make, which is always a plus!
What You Need:
- 1 Tablespoon Olive Oil
- 1 Medium Shallot
- 2 Cloves of Garlic
- 1 ½ Cup of Arborio Rice
- ¼ Cup of White Wine
- 4 Cups of Vegetable Broth
- ½ Cup of Parmesan Cheese
- 2 Tablespoons of Truffle Oil
- Salt and Pepper
How to Make this Go-To Risotto:
1. It’s All About the Base
In a large pan over medium heat, place in the olive oil and wait for it to be hot. Then add in the shallots and sauté it, until the shallots are transparent and tender, then add the garlic. It should take no more than three minutes.
2. Rice Time
Next is adding in the rice. Cook the dried rice, and for about 2 minutes, or when the rice is somewhat opaque on the outside but uncooked on the inside, stir often. When you’re done cooking, this step will give you a fantastic texture!
You then add in the wine and continue cooking until it is completely absorbed. Slowly drizzle in the vegetable broth, 1/2 cup at a time. After the broth has been completely absorbed, add another 1/2 cup, and repeat the process until the rice is cooked thoroughly.
After about 10 minutes, start tasting the rice. Stop adding broth once the pasta is al dente or a little chewy.
3. Savor the Flavor
Finally, add the parmesan and truffle oil and mix well. Taste and season with salt and pepper to taste.
